Vegan Chocolate Banana Nut Bread (V + GF)

Gang I found this amazing recipe from one of my favorite sites: Beaming Baker. This super moist and decadent bread is incredible. Both vegan and gluten free; it lends itself to many variations and pairs well with many foods,  making it a great stand alone snack or addition to any meal. I altered it a little changing from walnuts to almonds and using honey instead of maple syrup---still just as delish! Enjoy. Snap a photo and post it below!

INGREDIENTS

 

3 medium ripe bananas

¼ cup melted coconut oil

¼ cup pure maple syrup (can use alternatives such as raw honey for ACD or leave out)

¼ cup coconut sugar (can use alternatives such as brown sugar or leave out)

1 flax egg (1 Tbsp ground flax + 3 tablespoons water, whisk together, set 5 mins)

1 teaspoon pure vanilla extract

1 ¼ cups gluten free oat flour

¾ cup almond meal

½ cup unsweetened cocoa powder

1 teaspoon aluminum free baking powder

½ teaspoon baking soda

¼ teaspoon salt

 1 cup chopped almonds (save some for topping)

 1  cup vegan chocolate chips (can use alt. such as non dairy  dark chocolate chip)

INSTRUCTIONS

  1. Preheat the oven to 350°F. Grease pan with coconut oil or parchment paper
  2. Peel bananas and add to a large mixing bowl. Mash bananas until smooth. Add the coconut oil, maple syrup (or honey), sugar, flax egg and vanilla. Whisk until well incorporated and fairly smooth.
  3. Add oat flour, almond meal, cocoa powder, baking powder, baking soda and salt. Whisk together until just incorporated, making sure no flour patches remain but do not over mix. Add 1/2 of the almonds and chocolate chips.
  4. Pour batter evenly into loaf pan. Add remaining almonds and chocolate chips to the top of the loaf
  5. Bake for 65-80 minutes. Test for doneness pierce the center of the loaf with a thin knife -- will come out clean when done. 
  6. Set to  cool on a cooling rack for  1 hour.
  7. ENJOY! ( the bread freezes well and makes nice holiday/party treat)
