Delicious Morning Glory Power Muffins

THESE QUICK AND EASY TO MAKE VITAMIN PACKED MUFFINS ARE SURE TO BECOME A FAVORITE

SATISFYING, WHOLESOME, AND DELICIOUS

Ingredients

1/2 cup rolled oats

1 cup all purpose flour

1 1/2 cup whole wheat flour

1/3  cup Raw honey

1 tablespoon baking powder

1 1/2 teaspoons ground cinnamon

1 teaspoon salt

¼ cup raw coconut flakes

¼ cup ground flax seed

½ cup dark chocolate ships

3 large eggs + 1 large egg white (beat together before adding additional wet ingredients)

3/4 cup unsweetened applesauce

1 cup grated zucchini

1 cup grated carrot

3/4 cup raisins

Instructions

1. Preheat oven to 350 degrees.

2. Mix dry ingredients in a large bowl and set aside. In a separate bowl, whisk eggs and oil. Stir in grated zucchini and carrots. Add to dry ingredients and stir until combined.

3. Fill muffin cups about 3/4 full and bake for approx. 20 minutes. They are done when a knife inserted comes out clean, and tops spring back when lightly touched.

TIPS FOR MAKING THE BEST ZUCCHINI CARROT OATMEAL MUFFINS:

You can coat the pan using coconut oil or use paper liners. You may find the muffins stick to the paper a bit.

The batter used be a little dry. The moisture from the zucchini, carrots, and applesauce will moisten the batter as the muffins cook.

Mix the dry ingredients and the wet ingredients separately.

Do not over mix the batter or your muffins will become too dense.

Fill muffin cups about 3/4 full for even muffins.
